Shortbread is one of my favourite things – it’s easy to make
and absolutely delicious! You can play around with flavours and shapes, give it as a gift, and it smells wonderful.
Once you’ve made this delicious shortbread, you’ll never
want to buy it from the supermarket again!
What you’ll need:
220g butter
100g golden caster sugar (and extra for sprinkling)
220g plain flour
130g cornflour
Let’s get started!
1 - Preheat the oven to gas mark 4 and line a baking tray with
parchment paper.
2 - Using a handheld electric whisk or food processor, mix the butter
and caster sugar until smooth.
3 - Add the flour and cornflour to the butter and caster sugar,
mixing until well combined (do be careful not to overwork the dough).
4 - Take the mixture and tip it onto the prepared baking tray,
using your hands to spread it across the tray and level to your preferred
thickness. Prick the surface all over with a fork and bake for 30-40 mins,
or until it turns a pale golden brown (you can cut out your shapes once cooked).
OR
Roll out your mixture on a floured work surface and cut out
shapes before placing them onto the prepared tray. Place in the oven for 30-40 mins, or until they turn a pale golden brown (depending on the size of your shapes, cooking time could be less).
5 - As soon as you remove your shortbread from the oven,
sprinkle generously with caster sugar.
(If you took the first route at step 4,
you can now cut out your shapes while the shortbread is still warm).
6 - Transfer your shortbread onto a wire rack to cool.
If you want to experiment with different flavours, you
should add your chosen flavourings to the butter and golden caster sugar mix
before mixing in the flour (between steps 2 and 3).
